Bourbon Vanilla Peach Jam

Ingredients

6 Peaches
1 Cup sugar
1 Cup brown sugar
3/4 cup bourbon ( choose a decent quality bourbon you would drink on its own )
1 Tablespoon vanilla bean paste
2 Tablespoons lemon juice
Zest of one lemon

Directions

Cut an "x" at the tapered end of each peach. Blanche peaches in boiling water for 1 minute. Remove and place peaches in a bowl of cool or ice water. Peel peaches, cut into 1" ~ 1/2" pieces and set aside.
Combine 1 Cup sugar, 1 Cup brown sugar, 3/4 cup bourbon ( choose a decent quality bourbon you would drink on its own ), 1 Tablespoon vanilla bean paste, 2 Tablespoons lemon juice and Zest of one lemon in a saucepan. Mix and let sit for 30 minutes to macerate.

Heat on medium until peaches are soft, about 15~20 minutes. Reduce heat to low and mash peaches with a potato masher to a paste like consistency. Return heat to high for 5~10 minutes, stirring often to not burn. Let cool and distribute to sterilized (cleaned well) jam jars and store in fridge. While not a true shelf stable jam, the alcohol and sugar content will keep the jame unspoiled for many months.
